Over its 30-years of success, Sydney dining institution Bistro Moncur has built, maintained and cemented its legacy as one of Australia’s finest French restaurants. Since opening in 1993 with Damien Pignolet and Ron White at the helm, it has always been about the people, and I was honoured to have been commissioned to capture that story, right up to 2023 and beyond.

This brief was one I couldn’t wait to get stuck into, and it was really special to be able to meet all of the amazing people we interviewed over the 3-week production period.
